ITS COOKING TIME! ---------------------------------------------------------------------------------------- GHANAIAN CORN BEEF STEW (DISH IN WEST AFRICA) Ok here is a quick description of exactly what to have: 1/4 of a medium sized onion chopped 1 clove of garlic diced 1 Habanero pepper chopped (or any hot pepper thats in your taste) 1 medium sized tomato chopped 2 eggs 1/2 small can of tomato paste, diluted a little 4 tbsp of oil 1 can of Corned Beef (use only half) Spices (I used Adobo and Cayenne Pepper) (About a 1/2 tsp of each) Directions: Heat oil on med-high in medium sized pot. Once oil is heated add onion, garlic, habanero, tomato, and spices to oil. Let cook for about five minutes. Next add Corned Beef into mixture. Stir and cook for about five minutes until beef is in very tiny chunks. Next add the 2 eggs and allow them to just sit there for 1/2 -1 minute then stir into mixture until eggs are fully cooked. Last, add the diluted tomato paste to the stew. Stir and allow to cook another minute. Add a little more oil and about 1/4 cup of water if desired. Serve on top of cooked white rice or baked potato.
